Farmer Linda's Fruit Popsicles

I’m tired today, so it’s another installment of “recipe copout”.

But I’m not going to be a total slacker. This recipe is actually really good, and low carb.

Every summer we head east to Maine. While we’re there we get the privilege of being a member of Hooker Farm’s CSA. If you’re anywhere near the vicinity of Oxford Maine, you must consider getting your veggies from Hooker Family Farm. Farmer Linda is wonderful and her farm is sustainable, no spray, and bee friendly. Each week we go to the farm to collect our farm share and before heading back home the kids love being able to volunteer picking weeds, feeding the chickens, goats, and pigs, and pitching in on any other projects Linda might need help with. On one farm visit last summer it was especially hot and humid and Linda had a treat for the kids. She knows they’re Type 1 and knows we try to stay away from processed sugars. She brought out the most wonderful popsicles, made with honey from her bees, and raspberries from a neighboring farm. The kids were hooked.

Since that day “Farmer Linda’s popsicles” are constantly stocked in our freezer.


Farmer Linda’s Fruit Popsicles

  • 2 cups coconut water

  • 2 cups frozen fruit

  • 2 Tbsp local honey

    Blend all ingredients in a blender. Freeze in pop molds.

    That. Is. It.
