Mint Chip "Lara Bite" (copycat recipe)

I like to make processed sugar free recipes whenever possible for the kids. This means we use a lot of natural sweeteners like maple syrup, honey, and dates instead of white sugar. Their Glycemic Indexes are lower and we don’t see big spikes in blood sugar like we would with processed sugars.

These particular treats are a favorite with the kids. The almonds and the dates make for a sustaining snack with minimal blood sugar hit. I found this recipe when the kids were going though a Lara Bar kick and I was tired of shelling out a couple bucks per bar. The bite size is much more manageable for snacking.


Mint Chip “Lara Bites”

  • 10 (130g) medjool dates, pitteed

  • 1 1/2 c (200g) raw almonds

  • 1 c (180g) chocolate chips

  • 1 1/4 c (20g) cocoa powder

  • 1 1/4 c (28g) coconut flour

  • 5-10 drops peppermint essential oil

  • 2 tbsp water

  1. Put almonds in a food processor and blend until fine powder.

  2. Add dates, chocolate chips, coconut flour, and cocoa and process until well combined

  3. Add essential oil and water

  4. Process until well combined and beginning to ball up.

  5. Roll into walnut sized balls and store in airtight container in refrigerator

Makes 36 walnut sized balls. 80 calories each. 10g carbohydrate. 2g fiber. 2g protein.
