Samoa Cookies

Today I’m going to share another one of my healthy alternatives recipe. This one is for a Samoa, those Girl Scout cookies that I used to love. It’s super simple, quite healthy, and like most of my sweets recipes, goes well with coffee. There is no added sugar in the recipe, and the cookies are gluten and dairy free.


Healthy Samoa Cookies

  • 1 cup dates

  • 1 cup unsweetened coconut

  • 1/3 cup dark chocoloate

  • 1/2 tsp coconut oil

  1. Preheat oven to 400 degrees. Toast coconut for 5-10 minutes, until golden and fragrant.

  2. Place dates and coconut in a food processor and blend until a dough forms. Add water in small increments if dough does not come together.

  3. Prepare a cookie sheet with parchment. Roll 1 Tbsp of dough, flatten, and poke a whole in the center with a straw or chopstick.

  4. Place in freezer.

  5. Meanwhile, melt chocolate with oil, either in a double boiler or in small bits of time in the microwave. (I don’t own a microwave, so I’m not sure what to tell you for time here.)

  6. Remove cookies from freezer, and dip halfway in the chocolate. Place chocolate side down on tray, and drizzle remaining chocolate over the top (like a Samoa).

  7. Place back in freezer to set. Should be ready to eat in less than 5 minutes.

  8. Cookies are best kept in the refrigerator, after the initial freeze.

We typically dose about 8-10g of carb for these cookies, but it varies from person to person. There’s quite a bit of fiber, due to the dates. Walker tends to spike from dried fruit, whereas Ollie sees a minimal rise.
